INGREDIENTS:
2 cups basmati
2 cups vegetable broth
3/4 cup water
2 TBS coconut oil
3 TBS fresh juice of lime
Zest of one lime
Approx 1/2 cup of fresh chopped cilantro (to taste level)
1/2 teaspoon salt
INSTANT POT METHOD:
Using saute, warm coconut oil, add rice and broth.
Mix together for one minute on saute.
Add remaining items EXCEPT cilantro and 1 TBS of lime
Set on high pressure for 6 minutes, once done, let naturally release for another 6 minutes, then release remaining pressure.
Fluff rice and add cilantro and the rest of the lime juice.
